Welcome to the Culinary Arts Department at Mendham High School.  Culinary Arts One, International Cuisine, and Gourmet Foods and Creative Cooking and Baking are the course offerings for the 2006/07 school year.

Along with Eileen Mills, I teach Culinary Arts One, for which we offer 5 sections.  In addition, I teach the advanced classes of International Cuisine and Gourmet Foods, of which there are 1 section each. 

Culinary Arts One students learn all the basic skills necessary to follow recipes, complete cooking labs and practice independent cooking.  This class is a prerequisite for all other cooking classes.

In the International Cuisine class, we will be exploring many foreign cuisines along with regional national cuisines. Gourmet foods students have the opportunity to utilize skills and techniques acquired in Culinary Arts and apply them to recipes that require more advanced knowledge.

 I will also be organizing the annual field trip to The Culinary Institute of America which usually occurs in March or April.  This trip is open to all advanced cooking students regardless of which semester they were enrolled in cooking.

As you are aware, this is the first year of the new semesterization schedule and we are all working very hard to provide a full curriculum and learning experience for your child.

My background includes graduation from The Culinary Institute of America and many years as a professional chef. I am in my 13th year here at Mendham and always look forward to getting to know the new students and getting reacquainted with students I’ve had previously. My philosophy for my classes is relatively simple—cooperation and respect are the key ingredients for a successful environment. While I require strict adherence to sanitation guidelines and classroom rules, I always encourage every student to enjoy themselves, relax and have fun.  I also encourage all of my students to take their learning home and cook as much as possible.
